Her classes will run on a 4-day cycle but you can join for one or more classes.

Classes for a maximum of 12 guests start between 8:30 and 9:30AM. Dishes prepared during class will be served for lunch at the communal table with expertly paired wines. Classes end around 2:30 PM.

Vegetable and fruit forward cooking
Gather in the morning cool for a guided foraging tour of the Castello’s walled garden then head to the kitchen to learn the magic of the Italian way with vegetables.

Focus on handmade pasta
Traditional handmade pasta dough with seasonal sauces prepared with local ingredients .

Pescatarian cooking
Start with a tour of the fish market in Torre San Giovanni to select the freshest catch. Back in the Castello’s state of the art kitchen, tackle cleaning and preparing simple fish and vegetable dishes from the Apulian tradition.

Cheese on the table and in the kitchen
Start the day with a shopping visit to the Castello’s favorite local cheese makers, followed by a cheese tasting and lesson on the many uses of fresh ricotta and mozzarella in Italian cooking.
In addition to the above, all classes will include demo instruction of a dessert.
Lunch will feature a brief talk on wine pairing.
Workshop groups of minimum 6 guests.
Lodging available at Masseria le Mandorle or Castello di Ugento.
Tours in the area of historic towns, wine tastings, olive oil tasting and boat outings can all be arranged during free time.
Day 1 – The vegetable world
Walled kitchen garden tour to discover aromatic and wild herbs and plants.
Lesson in the kitchen learning traditional “nonnas” recipes.
Lunch prepared by the students with the Chef accompanied by local wine pairing.
Day 2 – Pasta Discoveries
Traditional pasta recipes from the north to the south with the tour to
Benedetto Cavalieri pasta factory.
Day 3 – The sea in all its waves
Daily fish market tour in Torre San Giovanni (Marina di Ugento), lesson in the kitchen focusing on fish recipes from Apulian tradition and preparation techniques.
Day 4 – Meat & Cheese
Focus on cheese and meat dishes with visit to local farm (cheese and mozzarella makers).
Day 5 – Italian Street Food and No waste recipes
Discovering the authentic Italian street food
Day 6 – The flavours of Italian traditional desserts
“Mani in pasta” with our Pastry Chef learning traditional Italian desserts.
