    Orecchiette are THE pasta of Puglia. Made of hard wheat and water they are toothsome and often paired with the tips of broccoli rabe in what is arguably the most iconic dish of the region. In this 2 hour workshop, you’ll learn how to knead fresh pasta dough, the technique to hand shape orecchiette and how to properly marry them with the bitter greens.
